Spaghetti Bolognese

Spaghetti Bolognese is a classic recipe, and pretty easy to make, as well. I know, shocking. A recipe made in almost every household is easy to make? What is this madness you are spewing?
While the recipe may seem kinda hard judging by the sheer volume of instructions here, when you really get down to it, the recipe is just a lot of simple steps.
Aside from this, it's a good idea to chuck this in a slow cooker for a few hours when you finish the recipe, instead of serving immediately.

Ingredients

3 red onion
2 cloves of garlic
3 carrots
Olive oil
500 g lean beef mince
400 g tin chopped tomatoes
1 tablespoon tomato puree
1 tablespoon balsamic vinegar
1 beef stock cube
3 bay leaves
500 g dried spaghetti
40 g Parmesan cheese (optional)

Method

Peel and finely chop onions, garlic and carrots
Put large saucepan on medium high heat and add 1 tablespoon olive oil
Add garlic, onions and carrots and leave lid ajar for 10 to 15 mins or until softened and just turning golden, stirring occasionally
Stir in mince, turn up heat to high and cook for 5 to 10 mins, or until browned all over, stirring and breaking it up with a spoon as you go
Add tomatoes, tomato puree, vinegar and bay leaves
Fill and boil kettle
Crumble in stock cube and pour in 400 ml boiling water
Stir well, turn the heat up to high and bring to boil
Season with pepper, reduce to low heat, then cover and simmer for around 1 hour, stirring occasionally
Remove lid and continue cooking for 15 to 20 mins, or until thickened and reduced
Refill and boil kettle
Fill large pot three quarters of way up with boiling water, add a tiny pinch of salt and bring to the boil
Add spaghetti and cook according to packet instructions
Finely grate Parmesan cheese onto a clean chopping board
Place half sauce into a container, leave to cool then freeze
Once spaghetti done, ladle out and reserve a cup of cooking water and keep to one side, then drain in colander over the sink
Pick out bay leaves
Stir the spaghetti into the remaining sauce, adding pasta water to loosen if needed
