Traditional Sapa Sui (Samoan Chop Suey)

Hi everyone, it's Emanuela! Today, I will be showing you how to make my favourite Samoan food which is chopsuey. It's basically like noodles in beef stock with meat and I absolutely love it. Eating chopsuey reminds me of being at my uncle's house, all of the family sitting around the table and eating. We engage in family time and talk about what's going on within our lives.
It's funny cause when I go back to my family's house, they all know that I love chopsuey and always make sure I have some on my plate. This is even really good for babies to eat, as it is soft and easy to chew. All ages and anybody can eat it and love it, and each culture has their own version of chopsuey.

SERVES: 6 - 8

INGREDIENTS:


  • 250 grams vermicelli noodles
  • 2 tablespoons oil
  • 1 large onion, diced
  • 2-4 garlic cloves, crushed
  • 500 g of chopped meat (I personally like lamb)
  • 2 tablespoons soy sauce
  • 2 cups water
  • 1 teaspoon of beef stock

DIRECTIONS:

  • In a large pan, fry the onion, garlic and ginger until the onion is translucent over a med/high heat.
  • Add and fry the meat for no more than 2 minutes It needs to be just seared. Stir so it doesn't burn.
  • Add the soy sauce and water (the water should almost cover the meat - not totally). Let simmer over a med. heat while you prepare the noodles (about 5 minutes).
  • Prepare the noodles as per the pack instructions (place hot water in a bowl and add the noodle).
  • Snip the noodles, you want each strand to be short.
  • Add the noodles plus 1 cup of the water from the noodles.
  • Add the remaining ingredients.
  • Stir and let simmer over a medium heat for 10-15 minutes.
