While this isn't strictly a recipe, I find it quite useful to know how to cook a steak properly (i.e. medium rare). Many people seem to not know how, so I figure it would be useful to list how to here.
While it is fairly easy to do, it is an acquired skill to that end. Fortunately, if you mess up, all you really end up with is a well done steak. Unless you really mess up, and burn the thing, but that's quite a difficult task to accomplish.
The only real thing of note is to not get crap steaks. This seems kinda "Well, duh", but hear me out. If you can't get them due to whatever reasons, that's understandable, but obviously a better steak is a better steak. Cheaper steaks tend to be more fatty and gristly, while more expensive steaks tend to be leaner. Now, a more expensive steak is not necessarily better, they just have less fat. So ideally you'd go somewhere in the middle, not cheap but not outrageously expensive.
