Samoan Palusami :)

Hi guys, it's Emanuela and welcome back! Today I am going to be introducing to you one of my favourite recipes from my culture, which is Samoan Palusami :) You are able to have palusami with about anything, including taro, which is my favourite accompaniment with palusami. It is super creamy and always reminds me of going back home to Samoa. I've found this recipe works pretty well, and when I've tried out this recipe for other people to try, they absolutely love it and enjoy it as well and I hope that you guys will love and enjoy it too!
Ingredients:

  • 2 bags of fresh spinach
  • 2 cans of coconut milk
  • 1 can of corned beef
Directions:

Prep - 10 minutes
Cook - 45 minutes
Ready In - 1 hour 5 mins
  1. Preheat the oven to 175 degrees C
  2. Make a layer of spinach leaves in the bottom of a baking dish. Sprinkle some corned beef, and repeat layers until you run out of spinach. 
  3. Pour both cans of coconut milk over the dish, pressing the leaves down with a spoon. Cover tightly with a lid or aluminium foil. 
  4. Bake in preheated oven for 45 to 55 minutes, or until spinach has wilted and the sauce is bubbly. Cool for 10 minutes before serving.
