This is a great recipe that I found while looking through some breakfast recipes for myself, I came across these delightful looking pancakes. It's a delicious meal to start the day off right, it is super quick and easy, anybody could do it. It does not take too much time out of your morning to create a tasty meal. I would highly recommend adding chopped fruits and berries to stimulate your taste buds, enhancing the experience of this appetising breakfast, perfect to begin your day. The recipe could create 9 pieces which could be ideal to serve a large group.
Ingredients (9 Servings)
- 3/4 cup of flour
- 1/4 cup of cornstarch
- 2 tablespoons of wheat or oat bran (optional)
- 1 tablespoon of sugar
- 1 1/2 teaspoons of baking powder
- 1/2 teaspoon of baking soda
- 1/4 teaspoon of salt
- 2 eggs
- 1 cup of buttermilk or sourced 2% milk
- 2 tablespoons of vegetable oil
- 1/2 teaspoon of vanilla extract
- Optional toppings
- Fresh berries or chopped fruit
- Maple syrup
Directions
- Stir flour, cornstarch, bran (if using), sugar, baking powder, baking soda and salt together in large bowl
- Whisk eggs, milk, oil and vanilla in a small bowl.
- Combine two mixtures into one bowl
- Spray a large non-stick skillet with cooking spray, heat over medium-high heat. Spoon 1/4 cup of batter per pancake into pan, spreading batter slightly
- Cook until bubbles appear on the surface, about 2 minutes. Turn and cook until lightly browned on the second side, about 1 minute
- Serve immediately or keep warm while cooking remaining batter, Serve topped with fresh berries and syrup, if desired
